Arbutus jam, a delicious recipe


A delicious fall recipe, arbutus jam is a digest of vitamin C.

Ingredients for 6 jars:

  • 2 kg of very red arbutus
  • 2 lemons
  • Ginger powder
  • 1 kg of sugar
  • 1 glass of water

Arbutus jam recipe

Easy to make, arbutus jam cooks quickly so as not to alter the high content of vitamin C contained in the fruit.

Start by removing the stems if there are any, then washing the arbutus.

No need to dry them as they will need a little water when cooking.

Preparation of the arbutus jam:

  • Pour the arbutus in a large saucepan or pot, jam basin
  • Over low heat, cook the arbutus slowly until a thick and uniform liquid is obtained
  • Stir regularly
  • We can add a little water if it is too thick during this 1st cooking phase

Pass the fruit through the mill:

Once this 1st step is completed, the fruits are passed through the mill to remove as many grains as possible.

For 2kg of fruit at the start, we obtained 1.5 kg of grain-free arbutus juice.

Cooking arbutus jam:

> Pour the juice obtained into the pot, jam basin.
> Then pour in the sugar and continue cooking for 20 minutes over low heat, stirring very regularly with the wooden spoon.
> Add about 1 teaspoon of powdered ginger.
> Finally add the juice of the 2 lemons then stop cooking
> Pour the arbutus jam into the jars, which you will immediately close by turning them over to create an air vacuum.

Cool and enjoy on a slice of toast, it's delicious!

Arbutus, strawberry tree, a shrub of great beauty

An emblematic shrub of the Mediterranean, thearbutus (arbutus unedo) often called strawberry tree for the resemblance of its fruits to wild strawberries, offers often abundant harvests.

Its fruits have the distinction of having a high vitamin C content and, although having little raw taste, are excellent when cooked to make jam.
