Fresh pasta and shellfish salad


Here is a delicious recipe for pasta and shellfish, periwinkles, mussels and cockles, easy and quick to make.

Ingredients for 4 persons :

  • 250 g of fresh pasta
  • 200 g periwinkles
  • 500 g of mussels
  • 500 g of cockles
  • 2 tomatoes
  • 8 basil leaves

For the vinaigrette:

  • 2 tbsp. mustard
  • 2 tbsp. sherry vinegar
  • 2 tbsp. tablespoons of olive oil
  • 6 tbsp. tablespoon of liquid cream
  • Salt, freshly ground pepper

Fresh pasta and shell salad

- Bring a pot of salted boiling water to a boil, immerse the pasta in it.

- Meanwhile, place the periwinkles in a pot of cold salted and peppered water, bring to a boil and remove immediately. Let them cool in the broth.

- Place the mussels and cockles in a saucepan, covered, season with pepper and cook until they open, reserve the cooking juices and shell them.

- Once the pasta is cooked, cool it, drain it and set it aside on a clean cloth.

- Peel the tomatoes, hollow them out and dice them.

For the vinaigrette:

- In a bowl, place and combine the mustard, vinegar, salt, pepper and oil, then add the liquid cream.

Skip 2 tbsp. of the cooking juice from the cockles and mussels with a fine strainer and add this juice to the vinaigrette, whisk.

- In a salad bowl, mix the pasta and the shells, then sprinkle with the vinaigrette, decorate with the diced tomatoes and the chopped basil leaves. Serve as fresh.

For a successful pasta salad, cooking al dente must imperatively be respected as well as the refreshing stage (pass the pasta under cold water), which allows to remove the excess starch and obtain pasta not sticky.

You can even prepare them beforehand: cooled and added with a drizzle of olive oil, they can be placed in the refrigerator.

The choice of pasta is also important: prefer short formats (farfalle, fusilli, penne ...) which are better suited to be mixed with other ingredients in a large bowl.
