Foie gras candies with parsley


For a tasty and original appetizer, Delpeyrat invented these Bonbons based on his new Foie Gras recipe for the end of the year celebrations.

Ingredients for foie gras candies

  • 150 gr of fresh foie gras
  • ½ bunch of parsley dish
  • 1 sheet of filo pastry
  • 1 egg yolk

  • Cut the foie gras into cubes, sauté it briskly in a very hot pan, for a few minutes, drain
  • Hull the parsley, wash it and drain it
  • Cook for 1 minute in boiling salted water. Refresh and drain
  • Mix the 2 ingredients
  • Make 4 squares in the filo pastry sheets
  • Place 1 c in the center, roll up like a candy, pinch the ends tightly
  • Dissolve the egg yolk with 1 tsp of water, brush the candy
  • Bake at 180 ° for 10 minutes
