Creamed carrot flan


Easy and quick to make, this creamed carrot flan recipe is also a gourmet starter or a light dish with a good salad.

Ingredients for 4 persons :

  • 1/2 bunch of chive
  • 600 g of carrots orange or yellow (or purple in winter)
  • 10 cl of milk
  • 4 eggs
  • 20 cl of liquid cream
  • 60 g of Petit Breton
  • Salt, freshly ground pepper

Creamed carrot flan

Preheat the oven to 150 ° C (th.5).

- Wash and chop the chives. Reserve.

- Wash and peel the carrots, cut them into slices.

- In a pot of salted boiling water, cook the carrots. Drain them and place them in a blinder.

- Pour in the milk and mix together. Pour into a bowl then add the eggs one by one, then the cream.

- Grate the Petit Breton.

- Add the cheese and the chives to the preparation, salt and pepper. Mix well.

- Pour into buttered ramekins and cook for 30 to 40 minutes in a bain-marie.
