Papillote of wild salmon, vegetables in young Cantal


Here is an original and delicious recipe of salmon in foil, pepper, zucchini and Cantal cheese.

Ingredients for 4 persons :

  • 4 salmon fillets (130 g each)
  • 1 courgette
  • 1/2 pepper green
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 40g butter
  • 120 g of young Cantal
  • Salt, freshly ground pepper

Papillote of wild salmon, vegetables in young Cantal

- Remove the stalk, peel, cut in half and seed the peppers. Cut them into strips.

- Wash and cut the courgettes into slices.

- Cut the Cantal into strips.

- In a frying pan, melt 30 g of butter, place the peppers there and cook for 3 to 4 minutes. Add the zucchini and cook for another 2 to 3 minutes.

Season.

- Preheat the oven to 200 ° C (th.7).

- Melt the remaining butter in a saucepan, brush the inside with 4 sheets of parchment paper.

- Remove bone from the salmon fillets, place them in the center of the sheets of baking paper. Distribute the precooked vegetables and place the Cantal slices.

- Hermetically close the papillotes. Bake and cook for about 20 minutes.

- Remove from the oven and serve the papillotes on a plate.

Make a "vegetable" papillote with the banana leaf, very resistant and which allows a nice presentation, an "edible" papillote with the buttered brick pastry sheet or even a cabbage leaf, leek blanched beforehand or even the papillote in silicone, very practical, easily found on the market.
