Endive with ham is a delicious family dish and a recipe we love for the taste and bitterness of endives.

Here is a great way to taste endives.

Ingredients for 4-6 people:

  • 8 beautiful endives
  • 8 slices of ham
  • 100 g of grated cheese
  • 50 g butter
  • 50 g flour
  • 75 cl of milk

Gratinated endive with ham recipe

Note that in Belgium and in the North of France, endive is called chicory and that this recipe is therefore called "Chicory with ham"

Prepare the endives:

The endives should first be cooked in a pot or other baking dish before putting them in the oven.

  • Start by removing the top leaves
  • Remove the hard end in the form of a cone, taking care not to cut everything so that all the leaves come off
  • Clean the chicory if necessary
  • Put them on the fire, covering with a little butter for 30-40 minutes

Make a bechamel sauce:

The bechamel sauce should be thick enough.

  • Melt 50 gr of butter over low heat
  • Add the flour and mix over low heat for about 1 min
  • Add the cold milk and mix until the sauce thickens
  • You can then season with salt, pepper and even nutmeg
  • Finally add 50 gr of grated cheese (Gruyère or Emmental)

Brown the endives with béchamel and ham:

  • Preheat your to 200 °

In a baking dish,

  • Wrap each endive with a nice slice of ham
  • Place them in your dish previously buttered at the bottom)
  • Add the béchamel on top
  • Arrange the rest of the grated cheese
  • Bake for about 15 minutes

Here are your endives with ham and béchamel ready to be served. You can then propose with a good lettuce seasoned with balsamic or raspberry vinegar to break the bitterness of the endive.
