Cod accras, dog sauce

Treat yourself to this delicious recipe for cod squash with dog sauce.

Ingredients for 4 persons :

  • 300 g filleted cod
  • 1.10 l of semi-skimmed milk
  • 4 sheets of laurel
  • 1 to 2 clove (s) of garlic
  • 1 onion
  • ¼ bunch of cive
  • 150 g flour
  • ½ tsp. baking soda
  • 1 pinch of salt
  • 2 eggs
  • 40 g semi-salted butter
  • 1 pinch of ground red pepper
  • 1 liter of grape seed oil for frying

Dog sauce :

  • 1 to 2 clove (s) ofgarlic (small)
  • 1 onion rosé (or red)
  • ¼ bunch of parsley
  • ¼ bunch of cive
  • 1 pinch of ground red pepper
  • 3 cl of balsamic vinegar
  • 10 cl of peanut oil

Cod accras, dog sauce

- Desalt the cod in a bowl of cold water for 12 hours, change the water two or three times.

- Poach it for 10 minutes in 1 liter of milk with the addition of bay leaves. Drain and pat dry. Crumble with a fork.

- Peel, degerm and chop the garlic.

- Peel and chop the onion.

- Wash and mince the cive.

- Pour the flour, baking soda, salt and eggs in a bowl. Mix well. Gradually incorporate the remaining 10 cl of milk and the melted butter. When the dough is smooth, add the crumbled cod, chopped garlic and chopped onion, minced chive and red pepper.

- Cover the salad bowl and let the dough rest for 1 hour.

For the dog sauce:

- Peel, degerm and chop the garlic.

- Peel and chop the onion.

- In a bowl, combine the chopped garlic, chopped onion, chopped herbs and chili, emulsify with the vinegar and oil (prepare the day before for more flavor).

- Heat the frying bath. When it is at the right temperature (175 ° C for electric fryers), scoop out a little dough with a spoon and immerse it in hot oil.

Cook and brown 5 or 6 accras at the same time, turning them halfway through cooking. Drain them and place them as you go on absorbent paper.

- Serve hot with the dog sauce.
