Here is a great recipe to accompany meat with this Mashed potatoes with Roquefort butter.
Ingredients for 4 persons :
- 60 g semi-salted butter
- 30 g of Roquefort
- 1 tsp. 1/2 teaspoon crushed pepper
- 500 g of potatoes
- A few sprigs of parsley
- Salt flower
- Freshly ground pepper
Preparation : 20 min - Cooking : 30 min - Difficulty : Easy
Mashed potatoes, Roquefort butter
- Roquefort butter:
Take the butter out of the refrigerator 1 hour before using it.
In a bowl, work the butter with a fork until it takes on the consistency of an ointment.
Incorporate the Roquefort and crushed pepper. Mix until you get a smooth texture.
Place the butter thus composed on cling film and shape into a roll, taking care to close the ends well.
Leave to rest in the fridge for 1h15.
- Mashed potatoes :
Peel, wash and cook the potatoes in salted water for 25 minutes. Keep them warm.
Crush the mashed potatoes and add the Roquefort butter. Season with fleur de sel and freshly ground pepper.
Wash, dry the parsley and chop it.
Serve in verrines, garnish the mash with parsley chiseled.
