Fall is the perfect season to make this delicious apple juice salmon recipe.
Ingredients for 4 persons :
- 4 salmon steaks (skinless)
- 30 gr of Butter
- Salt flower
Sparkling apple juice
- 50 gr of walnut kernels
- 100 g churned butter
- 3 eggs
- 4 to 6 tbsp. apple juice
- Salt pepper
Apple juice salmon recipe
For the apple juice sparkling wine:
Heat a pan without adding fat, place the walnut kernels in it, just grill them. Crush them and place them in a salad bowl.
Melt 100g of butter in a saucepan until it begins to develop a nutty smell. Pour it over the crushed walnuts. Leave to infuse for 30 minutes. Filter and reserve.
Break the eggs, separate the yolks from the whites, place the yolks in a bowl (or a bowl), pour in the apple juice. Mix with a whisk. Place the bowl in a bain-marie, incorporate the filtered butter while whisking. Season.
In a frying pan, melt 30 g of butter, place the salmon fillets on it, cook gently on one side (allow 10 to 15 minutes).
In 4 plates, distribute the salmon steaks, pour a string of sparkling wine and sprinkle with fleur de sel.
Tip about the recipe
You can serve the salmon with a pan of roasted vegetables (carrot, turnip, potato)
