Delicious Nantes recipe for cod with leek cream, it's both easy and quick to prepare.
Ingredients for 4 persons :
- 2 leeks
- 1 egg
- 4 pieces of cod (200g each)
- 4 tbsp of crème fraîche
- 2 tbsp of flour
- 50 g of butter 1/2 salt
- Salt pepper
Wash and mince the leek whites, cook them in the butter, covered, for about 10 minutes over low heat.
Dip the pieces of cod in the flour, pat them with your hands to remove the excess flour.
Then cook them in clarified butter.
Once cooked, place the pieces of cod in a dish and add the leeks.
Pour the cream into a bowl, then add the beaten egg.
Mix together then season.
Cover the cod and leeks with this cream.
Put in the oven in the grill position, then brown.
Serve hot.
