Cinnamon-flavored guinea fowl, dried fruit spring rolls


Here is a nice recipe for guinea fowl with cinnamon and its dried fruit spring rolls.

Ingredients for 5-6 people:

  • 1 guinea fowl farmer from 1.4 to 1.6 kg
  • 30g butter
  • 1/2 onion
  • 1/2 carrot
  • 3 garlic cloves in a shirt
  • 2 cinnamon sticks
  • Salt pepper

  • 25 g of blond grapes
  • 6 pitted prunes
  • 10 cl of port
  • 1 onion
  • 1/2 carrot
  • 15 cl of chicken stock
  • 2 cinnamon sticks
  • 3 pastry sheets
  • 40g butter

For the dried fruit spring rolls

- Heat the chicken stock, infuse the cinnamon sticks for 15 to 30 minutes.

- Rehydrate the grapes and prunes in the port.

- Peel, wash and chop the onion.

- Peel and wash the carrot, cut it into small cubes.

- In 20 g of butter, sweat the onion and carrot, pour in the port with the grapes and prunes, pour in 5 cl of chicken stock, reduce to dryness then let cool.

- Melt the remaining 20 g of butter, brush the pastry sheets cut in half with it.

Divide the dried fruit-based preparation among these halves of brick pastry sheets and roll up.

Brush the surface of the spring rolls with butter, place on a baking sheet and cook for about 5 minutes at the last moment.

Cooking the guinea fowl

Preheat the oven to 200 ° C (th.7).

- Place the guinea fowl in a baking dish with the peeled and halved onion, the peeled carrot and cut into pieces, the garlic cloves and cinnamon.
Season and cook 45 to 60 minutes (depending on weight), basting regularly.
Degrease the cooking juices, filter it, transfer it to a saucepan, reduce it until it becomes a coating, then whisk in the butter.
Check the seasoning.

On a hot plate, place a piece of guinea fowl, a spring roll, cover with the guinea fowl juice.
