Rabbit with grapes


Rabbit with grapes is a delicious, easy-to-prepare recipe that perfectly combines meat rich in omega 3, cider and grapes.

Ingredients for 4 persons :

  • 1 rabbit (1.5 kg)
  • 1 onion
  • 20 g semi-salted butter
  • 125 g of smoked bacon
  • 2 tbsp. tablespoon flour
  • 40 cl of cider
  • 1 sprig of thyme
  • 1 cluster of grapes reds (300 g)
  • 15 cl of liquid cream
  • Salt, freshly ground pepper

Rabbit with raisins recipe

  • Cut the rabbit into pieces.
  • Peel and wash the onion. Mince it.
  • In a casserole dish, melt the butter, place the chopped onion in it. Stir and add the bacon. Just brown. Get rid of.
  • Sear the pieces of rabbit in the cooking fat, brown on each side.
  • Pour the bacon and onion into the casserole dish, cook for 5 minutes.
  • Add the flour, stir again and pour in the cider.
  • Add the thyme, season and bring to a boil while continuing to stir.
  • Cover and simmer 45 minutes over medium heat.
  • Wash and seed the grapes. Add them to the casserole, simmer for another 15 minutes.
  • Pour in the cream and let thicken before serving very hot!

Rabbit :
Low in fat, rabbit meat contains 4 to 10% lipids, depending on the pieces. Succulent and nutritious, it provides between 120 and 160 calories per 100 g. Rich in omega 3, especially forehead and saddle, its flesh is low in sodium and cholesterol. With antioxidant properties, it is a source of vitamins B3, B12 and E. En papillote, embellished with a hint of cream and a squeeze of lemon, cooked with mustard and mushrooms, on the barbecue or with small vegetables, the rabbit finds its place in a balanced diet.
