Ingredients for 4 persons :
- 1 kg of potatoes of Noirmoutier (granules)
- 200 g of coarse gray salt
- 1 egg
- 250g of flour
- 10 cl of water
- 6 to 8 sprigs of rosemary
- 40 g semi-salted butter

Preheat the oven to 210 ° C (th.7).
> In a salad bowl, place the flour, coarse salt, the leafed rosemary, add the water and the egg white. Mix well.
> Brush and wash the skin of the potatoes, wrap them in salt dough.
> Place on a baking sheet. Bake and cook for 40 minutes.
> Break the salt crust with a knife, remove the potatoes.
> Sprinkle with pat of butter.
