Grilled steaks with blue cheese, mashed potatoes


Ingredients for 4 persons :

  • 1 onion
  • 4 tbsp. chives
  • 4 tbsp. flat-leaf parsley
  • 4 tbsp. of capers
  • 700 g minced steak
  • 4 tbsp. Worcestershire sauce
  • 4 tbsp. mustard
  • 1 egg yolk
  • 120 g of Bleu d'Auvergne
  • Salt, freshly ground pepper

Mashed potatoes:

  • 4 tbsp. flat-leaf parsley
  • 12 potatoes (almond)
  • Coarse salt
  • 40 g semi-salted butter
  • Salt, freshly ground pepper

- Peel and chop the onion.

- Wash and chop the chives and parsley.

- Chop the capers.

- In a salad bowl, place the minced steak, onion, capers, sauce

Worcestershire, chives, parsley and mustard. Season with salt and pepper, then stir in the egg yolk.

- Take 1 to 2 tbsp. of this mixture and shape into balls, hollow each one with a finger so that you can place a piece of blue. Close.

For the mashed potatoes:

- Wash and chop the parsley.

- Peel and wash the potatoes, cook them in large salted boiling water

salt 20 to 25 minutes. Drain, place in a salad bowl and crush

fork with butter. Season. Keep warm.

- Place the meatballs on a grill, flatten them and cook them (depending on the

desired cooking).

- Serve the steaks with the mashed potatoes.
